Milk for Niche Markets - BioCLA
CLA (conjugated linoleic acid) is a natural constituent of the milk and meat of ruminant animals and derives from the action of the rumen bacteria on unsaturated fats in the animal's diet. CLA is a proven anti-carcinogen. An epidemiological study in Finland suggests an inverse link between CLA levels in the body (and consumption of dairy products) and risk of breast cancer. CLA may also help prevent atherosclerosis and obesity.
Objectives
The project aims to derive natural, consumer-acceptable strategies and processing systems to produce CLA-enhanced dairy foods of proven safety and quality. The project will develop practical systems for year-round production of CLA-enriched milk and will go on to produce CLA-enhanced milk for the production of a range of dairy products (e.g. soft cheeses, ice cream and yoghurt). The processing attributes of CLA-enhanced milk and the sensory and keeping qualities of the final products will be assessed. From the best methods of production, pilot-scale quantities of CLA-enhanced dairy products will be obtained and will be used in human nutritional studies.
