Course Programme
The primary objective of commercial food business is to produce, distribute, store, handle, prepare and sell food at a profit. To ensure a profitable operation, proprietors and managers must implement policies and documented systems relating to all their activities. To formulate such a programme, managers require an understanding of all aspects of food hygiene including basic microbiology and food legislation.
This Advanced Diploma course is aimed at managers, hygiene specialists and trainers who wish to present the Elementary Food Hygiene certificate course. A full set of comprehensive course notes and Course Textbook will be provided.
Course content includes:
Bacteriology, Bacterial & Non Bacterial Food Poisoning, Food Borne Infections, Food Contamination & Prevention, Personal Hygiene, Food Preservation, Cleaning & Disinfection, Pest Control, Management Control Techniques, HACCP, Legislation, and Design, Construction & Maintenance of Food Premises & Equipment

Candidates should have ideally completed the REHIS Intermediate Certificate in Food Hygiene or equivalent before undertaking this course.

This is an intensive course but is structured to enable you to complete it in a short period of time. The course is delivered over five consecutive days.
Qualifications Obtained
Following this course, candidates complete 4 assignments and are then put forward for the exam. The written exam lasts 3 hours and is followed by an oral Q&A session lasting approximately 20-30 mins. Successful students will achieve the REHIS Advanced Diploma in Food Hygiene.
